I love the idea of giving away a sweet treat to guests as they leave a wedding, so I recently asked The Jewels of New York to come up with 4 dessert wedding favor ideas to share with Once Wed readers. Today we’re sharing the first recipe in the dessert series, Floral Meringue Sandwiches with Lemon Curd Filling. These delicate beauties are almost too pretty to eat, right?
Floral Meringue Sandwiches with Lemon Curd Filling Ingredients
Makes about 2 dozen sandwiches
8 large egg whites
2 cups sugar
3 tablespoons meringue powder
orange blossom extract, rose extract, peppermint extract
orange, pink and green food coloring
1 11-ounce jar prepared lemon curd (Wilkin & Sons brand preferred)
Preheat oven to 175 degrees. In a heatproof mixing bowl, combine egg whites, sugar, and meringue powder. Set over simmering water and whisk until sugar dissolves, about 2 minutes.
Pour contents into an electric mixing bowl. Use whisk attachment on medium speed, then high and beat until stiff, glossy peaks form, about 10 minutes. Divide meringue into 3 separate bowls. Add 3-4 drops of orange blossom, rose, and peppermint extract to each bowl. Then mix in food coloring to tint meringue and match to each flavor.
Transfer each mixture to a pastry bag with a large round tip. On parchment paper draw a template with 1 ½” round circles with 2 inches spacing in between. Flip over to use as a guide and spray lightly with nonstick spray. Pipe each circle with meringue forming small round discs. Bake each sheet for 1 hour or until dried through. Let cool completely and store in airtight containers.
To form each sandwich, spread ½ a teaspoon of lemon curd onto bottoms and finish with a meringue on top.
