Royal Icing Recipe
2 large egg whites, 2 teaspoons lemon juice
1/2 teaspoon vanilla extract
3 cups confectioners sugar, sifted
water as needed
1. In an electric mixer beat egg whites with lemon juice until combined, add confectioners sugar, beat on a low speed to a smooth consistency, add more confectioners sugar or water as needed. Use immediately, or store in an airtight container up to 2 days(icing hardens quickly when exposed to air) beat well with a rubber spatula before using.
2. Using the coral template provided as a guide under wax paper, trace with piped frosting on a baking sheet. On a baking sheet roll small balls of wax paper to create an uneven surface to dry, about 24-48 hours. use royal cake icing to adhere coral toppers to wedding cake.
